Better Than Sunday School Cake

After a very long hiatus finally a new post. I HAVE to share this recipe. And the story behind it. Last year about this time I was sitting next to a friend waiting for Sunday School to start. We were talking about food of course, and cake in particular. She said she wished there was a Christmas version of Better Than Sex Cake - a pepperminty one. So I went home and invented it. Another friend renamed it for me. Rather fitting.

INGREDIENTS
1 (18.25 ounce) package devil's food
cake mix
1/2 (14 ounce) can sweetened
condensed milk
2/3 C Hershey's syrup
6 crushed candy canes
2 C white chocolate chips
1 1/2 C whipping cream
2 t peppermint extract, divided
DIRECTIONS:
1.Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Poke holes across the top of the cake, making sure not to go through to the bottom.
2.In a saucepan over low heat, combine sweetened condensed milk, 1 t peppermint extract and Hershey's syrup, stirring until smooth and blended. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the holes. Let cake cool completely.
3.Meanwhile, warm whipping cream to almost boiling and pour over white chocolate chips. Let sit about 2 minutes, add remaining 1 t peppermint extract and stir until all mixed in. Chill in fridge for a few hours. Then beat with a mixer until consistancy of whipped cream. Spread on cake and sprinkle with crushed candy canes. Enjoy!
